Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons of olive oil (or butter)
  • 2 shallots, finely chopped
  • Salt and pepper
  • 1 cup or 250 ml chicken broth
  • 2 tablespoons lemon juice
  • 4 chopped garlic cloves
  • 1 teaspoon of paprika
  • ½ cup or 125 ml of 35% cream (heavy cream)
  • 2 tablespoons chopped parsley (or other herbs)
  • 1 teaspoon of cornflour to thicken the sauce
  • ½ lemon, cut into slices

Instructions

  1. Melt the butter in a large pan.

  2. Brown the chicken breasts for a few minutes, on both sides, over high heat.

  3. Remove the chicken breasts and set aside on a plate.

  4. Put the shallots in the place of the chicken. And make them back 2 minutes.`

  5. Add the garlic and paprika. Mix and cook quickly without burning garlic. Add salt and pepper.

  6. Add lemon juice and broth.

  7. Put the chicken back in the pan. Bring to the boil then lower the heat and cover it to simmer for few minutes. The sauce will reduce a little.

  8. Add the cream and parsley. Place lemon slices on the chicken breasts. Bring to a boil and cook for 5 minutes over low heat. If you like a thick sauce, add cornstarch and stir well to dilute it completely. Cook for 2 minutes. Remember that the sauce will thicken more while cooling.

  9. Your dish is ready. Serve and enjoy!
